Is it possible to have meteobridge send the data to two meteotemplate pages?
Reason I’m asking is I would like to have a local copy that acts as a backup for my data (which is my main goal) as well as a weather display that sits on my local network. Is there a way to do this?

Yes.
You can use the Weather Network tab for the first upload and then use the Services Tab for the second upload. The string used is:
